Breakfast for supper II

A great way to use up leftovers is to add to an egg dish. Last night I made sliced potatoes and made extra knowing that I wanted to make a frittata for supper the following day. Egg dishes are so versatile, you can add basically anything you want and it will turn out. To this frittata, I added my leftover potatoes, tomatoes (some of the last from our garden since it has turned cold here), and mozzarella and cheddar cheese. Yum!

Recipe:

10 eggs

1/2 cup water

Any leftovers or add ins you want (potatoes, tomatoes, cheese)

Heat a 10 inch skillet (oven safe) on stove top and pre heat oven to 400 degrees.

Spray skillet with cooking spray.  Crack eggs into bowl mix and add water, mix again until all yolks are nicely combined.

Pour into skillet and reduce heat to medium low.

Let cook until sides are slightly set and place in your add ins.

Carefully place in oven and bake about 8 to 10 minutes, and last-minute place oven to broil to caramelize.

Using a hot pad remove and enjoy, but be aware the handle is hot.
