Well after a day of rain then snow, we are finally dug out. It took sometime in the cold and wind. After all that time in the wonderful Minnesota winter weather, you get hungry! Am I right? Well at least this girl is.
What better way to fill up and warm up than a super easy soup! Seriously, I mean easy.
Half head cabbage, thinly cut
1 cup carrots, cut
1 can diced tomatoes
1 can cannelloni beans
In a large pot cook cabbage and carrots until slightly tender. Add tomatoes and beans. Add one can of water (I use the can from the tomatoes). Add salt and pepper, chili powder to taste. Simmer about 15 minutes and enjoy!
You all know how much I love breakfast food, breakfast food at anytime of the day. So when I can find a new breakfast recipe, you know I have to try it.
My sister mentioned a banana pancake recipe she loves, with the base, I added a few things to tailor to my favorite flavors.
It also happens to be the night before Valentine’s Day. To make them a little festive, I wanted to add a tint of red. Oh, so sweet!
It was a great Valentine’s Day Eve supper.
Makes enough for 2 hungry people or 4 not so hungry people
4 bananas, mashed (if not over ripe, I placed in microwave for a minute to help soften)
2 tsp vanilla
1/2cup rolled oats
Heat a skillet to medium and spray with cooking spray.
Mash bananas (use microwave to soften if needed), mash in blackberries. Add in eggs and mix well to combine, batter should be running with a few banana lumps.
Add in vanilla and oats.
Pour about a 1/4 cup batter onto med skillet, lower temperature if skillet is too hot. Cook for about 1-2 min until golden brown, flip and cook other side about 1 minute.
Remove and top with your favorite topping, mine is peanut butter, of course! Enjoy!
Well, I know its been a long time since I’ve posted any thing. But, I’m back and still hungry!
Last week my sisters and mom went to CA to see a taping of Ellen! It was so much fun and filled with good food, Bea Bea’s was so good we went there twice! Their motto is “Because breakfast is everything”, and if you know me, I love breakfast. They can make waffles and pancakes gluten free and vegan. The first morning I had a macadamia nut, banana, and coconut pancake and the second time apple cobbler (sorry no picture, was too hungry).
No back at home waiting for the Opening Ceremony to start, we made Gluten Free Bisquick waffles. Mine had peanut butter and bananas, so good!
